-1/2 cup flour -1/4 tsp. salt -1/4 tsp. pepper -1 Tbsp. oil -2 cups chicken broth -3 green onions, thinly sliced -1 Tbsp. cornstarch -1/4 cup soy sauce -2 Tbsp. rice vinegar -2 cloves garlic, minced -1 Tbsp. sugar -1 (10 oz) can baby corn, drained -8oz sliced mushrooms -3/4 cup red dragon fruit, cut into small pieces (or substitute 1/2 cup raspberries) If unavailable, substitute strawberries or another red berry of your choice.
Instructions:
1 In a large resealable bag, combine flour, salt and pepper; add fish and toss to coat. 2 Heat oil in a large saucepan over medium heat; add fish and sauté until golden brown on both sides and cooked through. Remove with a slotted spoon and set aside. 3 In the same pan, bring chicken broth to a boil; add green onion and cornstarch mixture and bring to a boil again stirring constantly. 4 Add soy sauce, rice vinegar, garlic, sugar and reserved fish; simmer for 2 minutes or until heated through. 5 Pour mixture into an ungreased 9x13 inch baking dish; arrange cooked fish over top of gratin and top with dragon fruit slices (or berries). 6 Bake at 350 degrees for 20 minutes or until bubbly hot. Instructions:
Preheat oven to 375 degrees F (190 degrees C). Grease a baking dish with about 1 tablespoon of oil. In a shallow dish or bowl, combine the vegetable broth, almond milk, nutritional yeast flakes, flour and pepper. Dip each piece of fish into the mixture until coated well. Place the fish in the prepared baking dish.
In a large skillet over medium heat, heat 1 tablespoon of oil. Add onion and garlic; cook until both are softened. Add mushrooms; cook until tender. Spoon mushroom mixture over the fish fillets in the baking dish. Sprinkle with thyme leaves and additional pepper, if desired.
