Some people are of the opinion that all seafood should be grilled or baked until slightly charred and crispy. I am not one of those people. There's something about a pan-fried fish fillet, cooked in a hot skillet with just a touch of oil, that is hard to beat.

The key to getting a perfect fish fry is to use a non-stick pan and to make sure the oil is hot enough before adding the fish. If the oil isn't hot enough, the fish will stick to the pan and it will be difficult to flip it over. You'll also end up with a lot of greasy residue on your pan, which is not very appetizing.

In this recipe, I'm using cod fillets, but any white fish will work well. You can also use gluten-free flour if you need to avoid gluten. The sauce is made with sour cream, Dijon mustard, and fresh lemon juice. It's creamy, tangy, and just a little bit spicy.

• 1kg (2.2lbs) fresh Mandarin fish fillets, scaled and deboned

• 125ml (1/2 cup) white wine

• 75ml (1/3 cup) crème fraîche

• 2 tablespoons Dijon mustard

• 2 tablespoons chopped fresh tarragon leaves

• 150g (1 cup) shredded Gruyère cheese, plus extra for sprinkling on top

Instructions:

  1. Preheat your oven to 220°C (425°F/Gas 7). Lightly grease a large baking dish.
  2. In a shallow bowl or dish, combine the white wine, crème fraîche, Dijon mustard and tarragon leaves.
  3. Place the Mandarin fish fillets in the mixture, making sure each piece is well coated. 4.Transfer the fish fillets to the prepared baking dish. Pour over any remaining marinade.
  4. Sprinkle over the shredded Gruyère cheese and a little extra black pepper.
  5. Bake in the preheated oven for 20–25 minutes until the fish is cooked through and the cheese has melted and started to brown on top. Serve immediately with some boiled new potatoes and steamed green vegetables. Enjoy!
